Radicchio is a cross between a light cabbage and a thick lettuce that is usually eaten raw but holds up well in a sauce. This slightly bitter green has nuttiness and bite, and it makes a sauce that is delicious over pasta or, as we have found at home, over flounder or any light fish.)
